Well, finally found a butcher close to Winston that had beef ribs. They were a little high but what the hell.

Those look great. Hard to tell from the photos, but doneness is the same test as brisket..they're done when they jiggle. Though others debate this point, even in an egg, I use a water pan (well) below the ribs.
Pro-tip - The left over bones make a great stock if you have enough of them.
