Sous vide tri tip

In for about 2 hours at 128. Pulled and hit with Dizzy Dust and oakridge Santa Maria. Seared off on the Weber pretty much sitting on coals with a chunk of hickory. The kids at what was cut in the pic about to make me a sandwich after we get them to bed.

@Lit is there a reason to season after the sous vide? Why not put the rub on before? Not criticizing, just asking - I have never done sous vide but thinking I'll get into it soon. Looks awesome man.Milton, GA

I usually season a little before the sous vide but I pulled this tri tip from the freezer it was vacuum sealed already. You always have to season after the sous vide a lot of the rub washes off from the juices that come out of the meat.GoooDawgs said:@Lit is there a reason to season after the sous vide? Great looking tri tip. That ajus is money on some mashed potatoes.
Any road will take you there if you don't know where you're going.

Looks perfect! I usually SV at about 133-135 for most steak type stuff these days. I should try a little lower and sear harder like that.Albuquerque, NM - LBGE and an old rusted gasser that I use for accessory storage.

A local butcher here Patton’s Meat Market had CAB tri tips on sale for $4.99 a lb. Good price for Georgia and good quality but I had to do a good amount of trimming since they sell their tri tips with the fat cap on and I don’t like to cook them that way.Moleman said:Lit, that's not a Creekstone by chance? @lit I'm headed to Pattons today to pick up a few briskets I bought during their recent sale. Do you recommend their tri tips? I noticed in your post you never said how they tasted - but they look amazing so I'm assuming you approve... thoughts?Milton, GA
