Fun cook yesterday - Poor Man's Burnt Ends

3 lb chuck roast at 250F for about 9 hrs total - including thunderstorm that rolled through.
Wrapped in pink butcher paper at 5 hr mark.
Sauced at 7 hr mark.
Tossed a big honkin' sweet potato (cut in half) on at the 6 hr mark. Oiled, poked and seasoned with S&P.

Great looking cook and outcome. Nailed the cook.BTW- Any "burnt ends recipe/result" that does not sacrifice a brisket point is a true winner in my book.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Typically, I wouldn't sauce them, and the next time I do this, I'll probably not use the sauce in the cook. I like beef and smoke. Simple.
