Fun cook yesterday - Poor Man's Burnt Ends

3 lb chuck roast at 250F for about 9 hrs total - including thunderstorm that rolled through.
Wrapped in pink butcher paper at 5 hr mark.
Sauced at 7 hr mark.
Tossed a big honkin' sweet potato (cut in half) on at the 6 hr mark. Oiled, poked and seasoned with S&P.

Great looking cook and outcome. Nailed the cook.BTW- Any "burnt ends recipe/result" that does not sacrifice a brisket point is a true winner in my book.

How do those compare to brisket burnt ends? I've never tried to do chuckie burnt ends.Cooking on a Large Big Green Egg in North Chicagoland.

Whatever we had in the fridge... honestly, it was just a cheap, sweet heat BBQ sauce. I think it had some chipotle in there. Whatever the wife had gotten on sale... But you could make your own or use whatever.zahulio said:Looks delicious. @vb4677 What kind of sauce did you use?
Typically, I wouldn't sauce them, and the next time I do this, I'll probably not use the sauce in the cook. I like beef and smoke. Simple.
