Awesome, I have a rack full of cutcos now I never touch and a used and abused no name japanese knife that is due for a swap out (somehow the blade is starting to crack). I’m pretty excited for this one.

You actually saved me a lot of money the tojiro was a place holder for a custom knife. This knife fits my needs and is sharp looking and it didn’t cost me $1k plus which is where it was originally going to be.

Honestly I don’t know. I know @MaskedMarvel is a big premier fan. @nolaegghead has the hakari and a few others. I honestly bet you can’t go wrong with either but I do know if you have a Williams Sonoma near you they let you demo knives in store. I believe this is a step up in the shun world and they do have slightly different aesthetics. I do know from what I’ve seen the premier 8” regular retail is $225 on sale for $179 the hakari is $375 on sale for $199 which to me is a “better” deal. But again I don’t feel like you can go wrong with either.

Just took out an onion to test it out just took out an onion to test it out. Very light compared to the Tojiro it replaced and felt good. These things come crazy sharp. Thanks again for posting this.

Mine came in yesterday, I was out of town for work of course. I tested it on a very ripe peach. Things is pretty amazing for the price, thin, light and sharp. Handle seemed to fit my hand well.
