National Wings Day 7/30 — Post ‘em here!

Nice excuse to prep and eat some wings!
Just rubbed 6 lbs with a chile-lime concoction spiked with corn starch help dry em out and crisp em up. They’re getting the fridge treatment til it’s time to cook tmw night. Going to make a mango-lime-habanero sauce — some will get glazed and some just get a quick bath after they come off.

I am celebrating but my calendar has the date as July 29, 2018. Regardless any excuse for wings is a good one. FWIW-Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

This is axactly why you need more than one egg. I was unaware of this date and committed to making a big batch of ABT’s for a gathering tomorrow. Looks like I’ll be firing up two eggs tomorow.

Going tonight, tomorrow doesn’t work out for me. Albukirky Anchonero kicked up a bit and some curry wings (totally made up). Rubbed and fridged since early this morning. It’s tomorrow in Australia, so I guess that counts.

Hard to tell them apart once they’ve got some char. The anchonero definitely has some good heat, sauce them with some Franks/butter/bourbon/honey. Serves the curry wings dry - flavor really got all up in there. Both were really good.

Underway-very raised direct around 370*F.
Around two minutes with the sauce then off to the altar.

First go at wings on the egg. Ran indirect at 425. Head Country original rub. Thanks to @lousubcap for the reminder of this "Wing Day".

Sometimes I don’t want them spicy. This is my go to non-spicey version. Fresh garlic, mustard, lemon, olive oil and black pepper. Marinate in the sauce and then baste with reserved sauce every 15 minutes till done.

Ran mine indirect at 350 for an hour, flipping at 30 Mins. Sauced half teriyaki and half honey bbq, then back on the egg for a couple mins. Paired with a tater tot bake, celery/carrots and of course, blue cheese.


with the egg still running I threw on some brownie mix. Paired with butter pecan ice cream. Happy Sunday everyone

I may have gotten the date wrong, but I got the wings right, If I do say so meself. 6 lbs. Some dry, some glazed, some run thru the sauce (mango lime habañero courtesy of @SciAggie from the 2017 exchange). A little peach gazpacho to cool things down. And a nice Spanish rose to cleanse the palate and focus the mind.
Didn’t think we’d finish them all, but The Prince, home from college, made it a challenge. Dad rarely doesn’t at least try to rise to the occasion. Done and done. Burp.
