Hi everyone,
i am attempting another prime brisket from Costco this weekend, and want to improve. My last cook went ok, but I think I may have over/undercooked it and I am not sure which. Can anyone share some advice based on the pictures? My guess is I overcooked based on some of it starting to fall apart. I think I put too much focus on trying to hit the around 200 IT mark versus trying to get the probe test down.

It's hard to tell from pictures. But if it fell apart, it was overcooked. Some (probably 60%) briskets are done before they hit 200. Some are not. Trust the probe.

And the probe in the thick part of the flat is the key to the finish-line. The point is just along for the ride. FWIW-
Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
Agree with the above. Also, make sure you let it rest for 20-30 min before placing in a cooler if you are going the FTC route.Large and Small BGECentral, IL

I think this may of been part of my problem. I quickly pulled it right off the egg and right into a couple hour FTC, I was scared of it dropping too low in temp. I've made that mistake. On the other hand if it hasn't quite released you can throw it right into the FTC and let it finish up that way if you are getting short on time.RustyBeavers said:
