Off the grate now and into the braise. Rubbed them overnight with 2/3 albukirky red and 1/3 pineapple head and have been spritzing with a blend of apple juice, peach nectar and ACV. Going to be tight on time but they’re really fatty, so longer on the braise and hotter on the finish hopefully gets me there.
