How long in the cooler.....

I miss calculated my cook. Smoked beef ribs overnight. Was expecting to wrap and cooler for a few hours but not this long. They finished at 4:30am and I need them at 11am. Will they be ok wrapped up in a cooler for that long?

should be no problem. just don't open/close the cooler and keep the heat in.

not much heat mass with ribs, i might put them in the oven now, lowest setting with the door partly open or in a 200 degree egg, but i would not be too overly concernedfukahwee maineyou can lead a fish to water but you can not make him drink it

I miscalculated my brisket last weekend, expecting to eat at 4pm. I started cooking at 2am. It was finished by 10am. Even in my crappy coleman, it was still holding at 165 IT at 3:30. I could have gone a couple hours longer If needed. You can heat the towels in the dryer to preheat the cooler too.Franklin, TN

Short Answer: Probably.
Long Answer: you have a 4 hour window for food safety once the ambient temp inside the cooler drops below 140F. Anything beyond that is taking a calculated risk.

As above, you will be fine. Another way to extend the FTC time for future reference is to pre-heat the cooler with hot water before commencing FTC. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Well crap. My plan was to eat them at work for lunch and watch everyone drool. I'm almost at 4hrs now. It's 8am....didnt want to have them for breakfast. My only option is to roll the dice and let them ride in the cooler, eat them now or throw them in the fridge to reheat later. What to do.

I ate 1 and my coworkers split up the other 2 amongst themselves. They loved them.
I would say they were probably my best ones yet. Found a local butcher here in Austin that has good product.
I smoked them with Oak and Mesquite for 8hrs unwrapped. When done I wrapped them in butcher paper, then a towel and into the cooler.Live in Austin/From Arkansas
