Second attempt at Linkie Marais "Not your average Mexican dip"

I was making some apps for Canada Day festivities and had a request to do this dip again.  In the previous version I had done ground beef cause I didn't have the sausage.  So this time around I grilled the onions till translucent, added the chorizo sausage and cooked till browned.  On the MM I had tomatoes grilling over direct.  I diced up the grilled tomatoes, added corn, garlic, and black beans to the onion and sausage.  Covered in a layer of mozzarella, cheddar and pepper jack cheeses.  Cooked on the large for an additional 20 minutes until the cheese melted and bubbles formed around the edges of the pan.  Added sour cream and guacamole to a zip lock bag and piped it onto the cheese.  Added fresh diced tomato, black olives and fresh cilantro.  It was a hit and I will admit the sausage was much improved over the ground beef.

It was well over the hundred degree mark that day so I also felt like something on the cooling side was required, so I made these little delights.  Fresh dill, Philly cream cheese and greek yogurt mixed together and sitting atop of a cucumber slice with a half cherry tomato on top.

I hope everyone had an eggcellent Canada Day and Independence Day!
