These shrimp was a test. I cooked them different from how I normally cook shrimp. The shrimp never “boiled”. When everything else was done boiling, I turned the fire way down so the water was simmering at best. At this point I dumped the shrimp in and constantly stired them until they were pink and had curled. I had my wife holding a thermometer in the water while I stired, the water dropped to 187 degrees when I dumped the shrimp in and when I called them done it had only risen back to 192 degrees. At this point I dropped the temp to 147 degrees for the soak.jabam said:Damn that looks good!
I have to say it worked great. The shrimp peeled very, very easy and tasted just as good as the way I normally cook them. Probably going to do it this way from now on.Location- Just "this side" of Biloxi, Ms.

Store bought here is only the plain Conecuh, which I do enjoy grilled and fried. My German ancestry would add boiled with potatoes and onions to your cooking methods. Have their web site bookmarked for ordering their other products; you being "Just this side" of Biloxi means you aren't so far from Evergreen, AL so distribution is a lot better.SGH said:

Conecuh sausage is from my part of the world. Evergreen is about 20 min south of me. Excellent sausage and excellent family that owns it.

I bought them right off of the boat when it pulled into the dock. For your line of work, that makes sense. Shale country, fracking has got things moving up that way. It's just a bit over a two hour drive from me. You'll need something to do on the weekends, and I have a couple wore out Webers you are welcome to come down and fool around with.SGH said:@DMW
