Reverse seared venison back strap

so tonight I did a reverse seared venison backstrap, twice smoked potatoes and grilled corn. Not too shabby 









I'm in Fredericksburg, VA, and I have an XL and a medium.

Looks amazing! What was your method on the venison? Got some in the freezer that needs eating and I’d love to try this

I season with olive oil, rosemary, thyme, sage, garlic and salt and pepper. Cooked indirect at 275 until IT of 115 then go direct at 500 until IT of 125 or so.ColbyLang said:Looks amazing!
