I bought a few jars of spice mixes at a local Latin supermarket, spatchcocked an organic bird, threw in some cherry and pecan for color and smoke. Raised direct about 375. So easy and delicious I don’t think I’ll ever cook chicken indoors again

My recipe was similar, mine used Huacatay in both the rub and green sauce along with the aji amarillo. I'm sure you will enjoy yours as we did. Post pics!
