“Secret” Pork Cut

So, to change directions from my last post, I was watching Anthony Bourdain Parts Unknown; Las Vegas, and he was eating at a high end restaurant. He was served a secret cut from an Ibérico pig. Had anyone ever found a source for this cut?  Thoughts on even if it’s worth trying to seek out?  There is a honest to goodness high end butcher here in Richmond, and she likely knows how to butcher it, as she routinely butchers whole hog for her shop, Belmont Butchery. http://belmontbutchery.com/
