Simple spatchcock chicken with John Henry's Texas Chicken Tickler, yellow squash and onions, and potatoes and onions.
The squash was for me and the potatoes were for my wife and little girl. I'm low carbing.

I wanted to try some of JH's stuff, heard great things about it. I usually make my own stuff, but I really like it. Good on chops too.JRWhitee said:Nice job Matt, Texas Chicken Tickler is our fav.------------------------------

Nice cook! As you've seen at BB, your sous chef is much calmer than mine is

That Chicken Tickler is a great rub. John Henry Mojave Garlic Pepper is another of my favorite rubs . Let me know if you want to try it, and I'll get some out to ya .#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX. -

What IT did you cook the chicken to? Does it vary based on the area of the chicken breast /thigh area?Atlanta, GA

Really nice cook and your daughter is super cool!!
Skin looked nice and crispy. Gotta ask why you didn’t dry brine with salt overnight and then hit with cornstarch before the cook.-----------------------------------------analyze adapt overcome2008 -Large BGE. 2013- Small BGE and 2015 - Mini. Henderson, Ky. -
If I have the time, I dry brine. No time here amigo. Decided to have the whole chicken that day. I dry brine with more than salt though.Mattman3969 said:Really nice cook and your daughter is super cool!!

The cornstarch thing, I can take it or leave it. Still enjoy the skin either way.------------------------------
