Did a spatchcock bird and some flatbreads. Followed up with some ribs. Messing around with my rib game. I’d call this a miss. They were fine, but I prefer my past flavor profile to what I did here. Bird and bread was easy peasy and delish!

    It just boils down to using a different base rub. I usually layer a couple rubs one hot and one not as much. I didn’t care for the base rub I used here. I’m not gonna mention the rub, cuz it’s not a bad rub. It simply fought with the other rub a bit and I didn’t like it As Much as usual. Outside of that, the cook was fine in all other aspects. I pretty much followed standard competition rib techniques. These were spares cut down to Stl. I like to wrap the spares and let the BB ‘s ride without wrap. I just think the fattier spares benefit from the foil where the baby backs don’t need the extra rendering. Just my opinion.
