Pork belly burnt ends!

Grabbed a pork belly for the first time after seeing a Malcolm Reed video.

Chunked into cubes and hit with some kinda concoction of spices I threw together.  

Should be in the smoke for about 2 hours, then wrap with butter and brown sugar for another 2, then glaze, back on for 15 mins voila!  Fat kid heaven


Other half of the belly went into salt and sugar for nitrate free bacon for ma dukes for mother's day.  That'll be smoking later this week.

If I don't get too inebriated I'll update as the day goes on

    Great recipe and looking good right there.  Here's a link to a thread from several weeks ago where I tweaked the end-game based on a recommendation from @Sea2Ski .  I thought it improved the finished product.  FWIW-

    Yep, couldn't figure out why it was on my mind, but you're my inspiration for watching the video and trying it!

    Back on after 1.5 hrs smoking.

    The girls just reminded me it's cinqo de mayo. Now we need to make these delicious little morsels into tacos... 

    Anyone got inspiration for BBQ tacos??

    Chop some of them shits up and throw it on a corn tortilla with a drizzle of bbq sauce and some tomatilla salsa and some diced red onion. Dont think i would do cilantro.

    I almost spit out my beer when I read this.  Great guy at work that's funny as hell says "them shits" all the time.  Best thing I've heard all day

    Yumm!  Pork belly tacos are what got me started on pork belly. It snowballed from there.

    Anc as expected got too drunk to dinish 2hat i started.  did corn  and flower tortillal i thought corn were bbetter.  simple onion lime juice garnich.  pictjres too shaky to  post
