I would love to see and hear some Veggie recipes that compliment all the meat. I did some tomatoes the other day.

One of the best things we had in Tuscany last summer was simple grilled zucchini. Sliced long ways about 1/4” thick and grilled with salt pepper olive oil. We are growing zucchini this year because of it.Keepin' It Weird in The ATX FBTX

Asparagus. Just a bit of olive oil, salt and pepper. Also wrapping a few in prosciutto and securing with a toothpick is also nice.Wisconsin, lbge, MM, kab, pig tail flippers, bear claws, and more rubs than I will admit to.

Eggplant sliced long ways. Season and top with fresh mozz.

For the egg I keep veggies quite simple - basic grilled. A little olive oil and salt and then some flavoring - bbq spice rub, other spice mixes, or some herb mix. Grill direct and serve. Sometimes sprinkle some grated cheese on after removing from the egg. More elaborate veggie recipes get made on the stove top or oven. Family favorite grilled veggies currently are asparagus, eggplant, summer squashes, endive, and green beans.Southeast Florida - LBGE

something not seen often is grilled beets and grilled fennel root. they pair well together. google grilled fennel and orange salad, another strange paring. crispy grilled oyster shrooms is another i like. hard to hate grilled marinated button shroons as well

I mix lots of sweet onions and various peppers, etc. with some EVOO and balsamic vinegar.. then they go into a grilling baskets over moderate heat, stirring as necessary. Very tasty and goes with just about anything~~
