Great butt, but no bark.?

Butts were 1st seasoned with Raging River , then a layer of mustard, and then seasoned with  Bad Byron's butt rub. Butts were on the grill at 300゚ for 8 hours.  Foiled at internal temp of 160 , Pulled at internal temperature of 202. FTC for 2 hours. Why no bark ?

    Maybe don't foil til the bark is if your liking, even then , foil will soften the bark...let it go longer, or better yet all the way naked....looks like a winner to me though

    Looks like too light on the rub.  Lay it on and make sure it adheres (mustard shoulda taken care of that).  First butt cook or same process and outcome as before??
    Edit: foil will soften the bark but will not remove what you have laid down during the cook.  FWIW-
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    It was an indirect cook. In the past I did not foil, but had some bark become quite blackened and almost unedible. So this time I decided to foil.  Thanks for the feed back,  Next time I will wait to foil until I have the desired bark. Or maybe not foil at

    No mustard, no foil. Ever.

    I hate it when I go to the kitchen for food and all I find are ingredients!
