Thoughts on leftover Italian meatballs to repurpose to Moink Balls

Yesterday I cooked raw pre-made Italian meatballs; sauted them to almost done then added sauce to and simmered to finish.  Made too many.  Too good to pitch out.  What do y'all think if I turned them into Moink balls this weekend?  Since they are already cooked, would they turn hard as softballs, or would adding the bacon and smoking indirect remoisten them to yumminess?  
I like my butt rubbed and my pork pulled.

    im thinking that since they were simmered in sauce they will be soft verse hard. never done the moink balls, subs from leftovers would be great too

    Nothing ventured, nothing gained.  You can always par-cook the bacon so that the total cook time is well reduced.  I would go for it.  Easy for me to say... ;)

    I would, many used precooked frozen meatballs for moink balls, should be the same

    Appetizer, RTD Moinkballs*, BobbyB

    INGREDIENTS:
    Frozen Meatballs from Sam's Club
    Bacon
    Thinned BBQ Sauce (Jack Daniels or other)
    Your favorite rub (Dizzy Pig Jamaican Firewalk or other)

    Procedure:

    1. Prepare egg for 250-275° F. direct cooking with a raised grid.

    2. Thaw the meatballs.

    3. Wrap meatballs in bacon held with a toothpick.

    4. Dust with your favorite rub.

    5. Smoke wrapped meatballs until the bacon is done and internal temperature is about 140F

    6. Dunk them in the thinned sauce.

    7. Smoke some more to set the sauce.

    8. Serve in a bed of the sauce.

    I think it will be fine. When I have made moinkballs they were precooked and frozen...so they were already cooked once as well. 

    I like Lou's idea of par cooking the bacon. Either that or you could freeze or partially freeze them.

    I would par cook the bacon to reduce the risk of the meatballs overcooking to the point of drying out.

    Mrs. 500, SWMBO, wants meatball subs, I want Moink Balls, so I guess it’s meatball subs. I can kind CL them up by using toasted garlic bread for the buns. This will be for a get together with two good friends so I’m sure there will be bourbon involved so how bad will it be, whatever form these meatballs take?

    for the moink ball subs, lightly brush the rolls with melted butter, dust it with a favorite rub, then toast the roll ;)

    Moink Ball Subs on toasted garlic bread rolls.  That sounds Ugly Delicious.  (Sorry, I just started watching that series.)
