Alder-smoked ham and chestnut mushroom carbonara

We had some ham left over from the holidays that I'd smoked with alder wood (and applied a coating of chipotle and bourbon sauce, mixed with Dizzy Pig Crossroads). I made some carbonara with it ... it's not traditional but meh. I threw some asparagus in as well.

@Eoin / @TheToast (and anyone else UK based) I'd recommend checking out The Smokey Carter, I used their sauce for this. They're UK based, new (I think) and use decent ingredients. Tastes great too.

Looks good. That is the craziest rendition I've ever seen.
I do like traditional spaghetti carbonara. In my house when we put leftovers such as those into a normal dish it's called 'a big ole mess'.
