OT Which sous vide device?

Looking at getting a sous vide immersion unit and wondering what others have. Not a fan of those that require BlueTooth or WiFi just to start up. We actually used an Instant Pot Ultra to do a top sirloin roast and finished on the BGE at 600 for 5-6 minutes. Great cook!!!

    Another big fan of the Anova. Mine is just the basic one - not bluetooth!

    Anova.  The Joule looks pretty cool, but I'll save the $$$ and go w the Anova.  It goes on sale on amazon regularly.

    I don't have the Anova (yet) but I have watches some vids. The new models all come with Bluetooth or Wifi, but they are not needed to set it up. There are controls and a display on the unit and they look simple to set up. Basically spin the wheel to your setpoint, and press play.

    I've used my Anova at least 150 times and have never felt the need to look into the bluetooth capabilities.

    The only reason I can see to have WiFi capability is if you are at work and want to use the ice water bath trick to be able to have your steak or chicken ready when you get home from work. Being able to fire up the circulator in the early afternoon would be a useful thing.

    I went bleeding edge and bought two Anova on Kickstarter.  One of them is wonky, I use Thermapen to keep it honest (needs to add few degrees to compensate). The manual wheel on the same unit is also wonky, have to use phone app to set time/temp via bluetooth.  I'm sure they have improved and ironed out the bugs since.

    I have an Anova BT and Joule. Bought the Joule in my  Christmahannukwanzakah shopping frenzy, because it was on sale. 

    Here's what I know:
    Anova
    Power 800W (BT), 900W (wifi)
    Circulates 8 liters/min
    Needs more water to operate
    More metal parts
    Fits my cooler better

    Joule
    Power 1100W (heats the water up noticeably faster than the Anova)
    Circulates up to 6 L/min
    Needs less water to operate (the min water level needed is less than the Anova)
    Doesn't fit my cooler well (but easy to use with  smaller pots. 

    -The Anova wifi has a neat Ice Bath feature where it will monitor the temp of the ice bath, and send you a notification when it hits 40F. Then you program it to run your cook remotely. You can do something similar with the Joule, but its not as streamlined. 

    - I was able to rig a clip bracket to use the Joule  in a cooler, but prefer the Anova for the cooler.

    - The magnetic base of the Joule is neat, and lets you position the unit in the middle. Maybe this circulates the water more evenly?

    - The Joule feels more plasticky. The impeller is plastic. The Anova's is steel.

    I have been using the Joule more recently, because its compact and fits into a kitchen drawer very easily. Also easier to travel with. The Anova used to be my travel unit, but its bulky compared to the Joule.

    - I sometimes miss the controls being on the unit (Anova) vs. control via phone (Joule). I'm getting over this though, since it is convenient to have the Joule nearby in the kitchen drawer.   

    So currently, I use the Joule more than the Anova (a couple of times weekly), and will likely get rid of the SVS Demi sitting in the corner. If you SV large quantities in a 35qt cooler, then maybe the Anova is for you. If the sleek form factor of the Joule flicks your Bic, then get that one. I think the Anova is on sale more often though, and is cheaper than the Joule to begin with.

  • Two Anovas here that I use at home (wifi and bluetooth version), and I have a sous vide supreme at work.  We cook a lot at work.  I like the anova a lot as it allows you to run it without a phone, but connecting over wifi while remote is cool too, but not needed.

    I have one of the earlier Anovas w/o issue.  Sure I could try the BT functionality but that's too close (eg my kitchen and my play room are too far apart).  It's been perfect for me.  Im still waiting for their smaller next gen follow unit thats similar to Chef Steps Joule - though hopefully without the wonkey diet follow on.

    My PolyScience Professional is my go-to unit out of 4 of them.  Little pricey but worth it.

    +1 on the Joule.  I am a fan of the compact design and have had no issues controlling through the phone, and it has plenty of power. 

    The clip also works well on pots and the CamSquare lugs we use as well. 
    (now only 16 stone)

    Used an Anova Bluetooth to reheat 100# of pulled pork for a wedding. Worked like a champ. Buy one and try enjoy. I really like the chicken breast and lobster tail(go easy on seasoning it really makes it strong).  
  • I have an anova blue tooth model. I really like it and have never used the Bluetooth or wifi options.

  • Another vote for Anova, I love mine and use it constantly. The wifi is convenient only because I will know if something goes wonky when I leave the house with it on.

    I went with a Gourmia for two reasons... 1.  It had more wattage than Anova and 2.  It was half the price. 

    I figured it would be a cheap gadget if I decided I didn't like sous vide or the process.  (It turned out that I do like the process and have used the Gourmia several times with great results)

    I didn't really care about wifi or bluetooth as this is pretty much a set it and forget it device that you don't really fool with once everything is set. 

    On the down side for Gourmia (very small) there is a learning curve in getting everything set up.  I don't know how Anova or Joule setup is so I cannot compare.

    I've been using my Gourmia for about 2 years now with no issues.

    PS... We also love the Instant Pot!!

    I have a Polyscience Sous Vide Professional CHEF Series.

    It is a fantastic unit and can handle a cooking vessel up to 8 gallons in size. The water pump can 3.2 GPM for even cooking.

    I probably would recommend someone to try one of the Anova units first.
    You may find SV is really not for you.

    I've had the Joule for over a year and love it. The Joule app is perfect for timing cooks and making great entrees. I tried it for brisket and ribs both came out damn good.
