Dino Rib Burnt Ends Sandwich

Another non-traditional burnt ends cook....although maybe more traditional than with pork belly. Started with 8lbs Prime plate ribs which were approaching wagyu marbling in places!

Rubbed last night with Holy Cow rub and wrapped in the fridge overnight. Put them on the egg this morning at 250 indirect with oak. Smoked until I ran out of coals  :| which left the meat at about 170 IT. 
Pulled them off, cubed and added some more rub, a little sauce and some water.

Currently foiled and in the oven at 300. I will post the final follow ups when digesting....
Thought it appropriate to crack an aged bourbon barrel porter for this meal.
