Seared Scallops over Spaghetti Squash

Started out roasting about 1lb of spaghetti squash that I cut into 1” or so rings((u get longer strands this way) . I seasoned with a general Italian seasoning. No pics of that. I cooked some chopped bacon while the SS was gettin happy.
Next up I sautéed some chopped asparagus and green onions in the bacon grease followed by garlic and then turned the heat down and added the SS to stay warm

The mini was cruising at 550 direct to sear the scallops. Just flipped after 4 mins or so.

Scallops on a bed of sketti squash ,asparagus, green onions n garlic. Sprinkled with fresh parsley n parm

The taste and texture was unreal between the squash and scallops, much better than I expected. Thanks for looking.

That is above your normal very high bar. Those scallops looks delicious and I’m sure the textures and flavors were great.Coleman, Texas
Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
"Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"

Great looking meal right there. I really like how your dishes are a little out of the ordinary, at least for this site.
