Christmas Eve Chinese Spareribs

No good Chinese Restaurants nearby so we made a couple of racks on my XL. Came out great. A little under 5 hrs indirect, Cherry Wood smoke, Brushed the ribs 3 times during the cook. Once again I was disappointed in my guru which did not measrure pit temp for the second cook this month. Old standby Maverick saved the day. Merry Christmas to all.
