How to accelerate oven roasted pork shoulder? Running late on tonight's dinner.

Hi egg friends,

I am in need a quick rescue. I was planning on making Bo Ssam for dinner, but misread the recipe earlier this week and am now behind on tonights dinner.

I have a ~9lb bone in pork shoulder. The recipe calls to roast in the oven for 6 hours at 300°F, or until collapsed. I just put it in and am hoping to eat 4-4.5 hours.

I'm thinking 350°F should get it there in time, but hope you guys can share your best advice.

Thoughts?

    Yes, wrap in foil also.

    Approximate cooking times for pork butt/shoulder:

    225º:  2 hours a pound

    250º: 1.5 hours a pound

    275º:  1 hour per pound

    350º:  30-45 mins per pound


    There is a good amount of variability between individual pieces so take all times as rough. Times assume a full sized butt - 7-10 pounds.

  • How did it turn out? Too late now, but cutting it in half would have sped cooking, also and gives you more bark.

    The real question is why would you use an oven for this?   This is close to blasphemy... ;)
