Burnt End Experiment A Success!!!

This is probably blasphemy to you brisket purist out there but my burnt end experiment with a flat was some of the best burnt ends I have ever had. I simply smoked the flat overnight, pulled and foiled for a rest in the cooler for 1 hour, and then cut it in chunks. I put them in a pan with sauce and then back to the smoker for 3 hours or so. They crisped up but remained tender as can be.[p]

Congrats. When I saw your 1st post I thought it might be to late to chuck up. Although I love my sliced brisket, I sure do like burnt ends.
