    Yup, maybe I meant heat retention.  It seems (to me) that there are much less hot spots when I'm cooking with my cast iron (enamaled or not) than my lighter pans of Aluminum or SS.  Not to get into the science of it, I believe what you guys wrote.

    When I'm cooking on a large CI pan, I put it on the stove at low heat while I'm prepping the other food.  Then I turn up the heat when I'm ready to cook.  Seems to work very well.

    I'd pay $100 for a smooth cooking surface CI to save me from pulling out tools and grinders I may not have.  I don't think I'll be buying a $300 skillet though.  for that money, I could buy me some top shelf eggseccories!

    @KiterTodd you’ll be hard pressed to find anything more versatile than a #10 Griswold/Wag etc. There’s just no substitute for quality vintage iron.

    Huh? **** slapped. “Whoa is me” Me thinks not. Although if you were to slap it would likely be a **** slap. I just point out who you are, you all do most of the work for me. Just like Popeye, you are who you are.

    I hope so. Girls are a lot meaner than boys. I was lucky, but I know a lot of people aren’t so much lucky with the drama. You’ll see it’s just like you and your buddies. You’ll see.

    Another good skillet in the <$100 sector you might want to consider is the Stargazer - http://www.stargazercastiron.com/products/skt-105/

    Nice and smooth and it has a great handle. I really like a good handle and none of the vintage stuff I've used, and most of the newer stuff, have handles that make me smile.

    Of the four skillets I've bought in the past year or so from the "boutique" US makers - Stargazer, Field, Finex, Marquette - the Stargazer is my favorite.

    You can likely find a decent vintage piece that has been properly cleaned and seasoned for less than a Benjamin but if you want to buy something from one of the new folks in town a Stargazer gets my nod.

    That said, I use my carbon steel pans far more often so maybe you should consider that fork in the road. :)

    I was hoping they made more sizes/products, but there's just the one for now.

    Heck, they even take PayPal.  I'm trying to think of a reason not to buy another cast iron pan...   =)

    My Grandma had one, "Pepe".
    He was a mean little sumbitch, all bark and no bite.
    He would constantly nip at us boys, growl.
    Grandma had a wooden yardstick within arms reach, along with her Hamms can, and if he'd nip...SMACK!
    He'd go running under the chair, and growl, and mean mug us, growl some more.
