Cast Iron Conundrum... (Smooth vs. Rough surface)

My mom passed a couple years ago. @YukonRon was right about you. Such class!
-
What?
@YukonRon is a heck of man and one I respect. He's right on the money with about anything.
Not sure what someone's late mother has to do with that though Pete. No one said anything about that.------------------------------

Read again chihuahua boy. Oh wait, he deleted it because even he was embarrassed. I actually respect that. It can happen to any of us.tarheelmatt said:What?

Man is he right. Classs like I couldn’t even imagine. Just class, class, class.
Ron, I’m sure is a great guy. -
You decided to jump in the ring Pete. Don’t whine when you get whacked with a folding chair.
-
Yup, maybe I meant heat retention. It seems (to me) that there are much less hot spots when I'm cooking with my cast iron (enamaled or not) than my lighter pans of Aluminum or SS. Not to get into the science of it, I believe what you guys wrote.
When I'm cooking on a large CI pan, I put it on the stove at low heat while I'm prepping the other food. Then I turn up the heat when I'm ready to cook. Seems to work very well.
I'd pay $100 for a smooth cooking surface CI to save me from pulling out tools and grinders I may not have. I don't think I'll be buying a $300 skillet though. for that money, I could buy me some top shelf eggseccories!
Good discussion! (well, most of it anyway
) Thanks.

@KiterTodd you’ll be hard pressed to find anything more versatile than a #10 Griswold/Wag etc. There’s just no substitute for quality vintage iron.

You chihuahuas are just like thirteen year old girls. LOL! You’ll see soon enough. You got a little one.tarheelmatt said:Still don't understand your pity party Pete.

I don’t really think it’s a big deal Boss. I’m just amusing myself with the bantering. Whooooo!DoubleEgger said:You decided to jump in the ring Pete. Don’t whine when you get whacked with a folding chair. -
There had been no whining for the record. I merely hold up a mirror for you to view yourselves.DoubleEgger said:You decided to jump in the ring Pete. Don’t whine when you get whacked with a folding chair. -
Haha.. You jump in here Pete, take some swings, get beeatch slapped a little, and now it's woe is me. Like a text book with you guys.pgprescott said:

Don't worry Pete, I'll raise my little girl to have a back bone and not be a little beeatch when the going gets tough.
Carry on.

I hope so. Girls are a lot meaner than boys. I was lucky, but I know a lot of people aren’t so much lucky with the drama. You’ll see it’s just like you and your buddies. You’ll see.tarheelmatt said:

Another good skillet in the <$100 sector you might want to consider is the Stargazer - http://www.stargazercastiron.com/products/skt-105/
Nice and smooth and it has a great handle. I really like a good handle and none of the vintage stuff I've used, and most of the newer stuff, have handles that make me smile.
Of the four skillets I've bought in the past year or so from the "boutique" US makers - Stargazer, Field, Finex, Marquette - the Stargazer is my favorite.
You can likely find a decent vintage piece that has been properly cleaned and seasoned for less than a Benjamin but if you want to buy something from one of the new folks in town a Stargazer gets my nod.
That said, I use my carbon steel pans far more often so maybe you should consider that fork in the road.

It's funny that you don't see any sides Pete. Mike said nothing out of the way, but low and behold, the cornfield trio had to say something to start something, and now the woe is me starts to come from you and your bunch.------------------------------

I was hoping they made more sizes/products, but there's just the one for now.
Heck, they even take PayPal. I'm trying to think of a reason not to buy another cast iron pan...

My Grandma had one, "Pepe".pgprescott said:Yip yip yip yip. Lol. I guess chihuahuas can’t read neither. Get em boy! Yip yip. ^^^^^^
He was a mean little sumbitch, all bark and no bite.
He would constantly nip at us boys, growl.
Grandma had a wooden yardstick within arms reach, along with her Hamms can, and if he'd nip...SMACK!
He'd go running under the chair, and growl, and mean mug us, growl some more.
Beau(Brother) and I would laugh.
