Some famous Indian chef called into the NPR food show and recommended rubbing the turkey down with papaya paste. Another notable chef called in and confirmed it was a true game changer. @Blasting- I always deliver a protein that is counter to the "norm" for the day. The loin was stuffed with mozarella cheese, layered with prosciutto and then I spread a spinach, artichoke dip.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

Obligatory Turkey shot. Totally scorched the ends of legs, even wrapped. Worked out well though. The ends broke off and pulled all the tendons right out. Made legs super easy to eat. Happy mistake I might try again. Makes presentation not as pretty though.

Second dinner plated. We hosted, so this meal I can really sit back and enjoy. I am still stuffed, but you can only have a second thanksgiving dinner on one day of the year, so you do what you gotta to do.
