Word to those who think they're wise.... if you're new to the egg.... it's a different animal. I am humbling myself to understand that there are different elements at play. What I cam say is that I am learning on every cook. Here we have beer butt chickens with acorn. Squash and wings. Cooking at a much higher indirect heat tonight with a drip pan elevated ever so slightly off the convector/plate setter. This tastes like more of what I'm used to. Screw it that it's 8:12, wife and kids ate leftovers... I'm figuring this S#! $ out!

Best part was calling my neighbor over to pound a beer so I had an almost empty can of beer. He stayed for the whole cook!

Great beer choice, like the Torpedo as well.
Have you tried chicken raised direct? With the egg you can dial the heat down and get the protein far enough away from the heat you don't turn the skin into asphalt.

EDIT - am referring to a spatchcock chicken using raised direct.Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad! -
