Meatloaf is one of my favorite cooks.

Options
I have always liked meatloaf, and even more so when it has that smoky hint to it. I even enjoy the prep. Dicing onions and peppers, crumbling crackers, stirring in egg and sour cream, guessing how much ketchup and 57 sauce to use, just mixing it up and shaping it, I enjoy all of that. Weird, I know. This one looks good. I sometimes cook the loaf on the grate above the drip pan, sometimes right in the pan. Tonight I cooked it right in the pan, no real reason, just did. Added some glaze and mushrooms at 130 then finished to 160 indirect at 350. No plated pics because my wife is not home yet, she had an evening meeting, and I'll wait for her, though I am tempted to at least have a bite or two, you know, just to see if it is done  or not.
