Morning All:
Today was number 43 for me & my much better half...started the day by going to Mass together then out to a local restaurant for breakfast...However, tonight was the REAL meal...stopped at Publix & picked up a couple nice filets (total weight 1.2 pounds)...used some Kosher salt & DP Raising the Steaks (ready to go on)...
After roasting for a few minutes on the grate to get IT up to about 115 I moved them to the cast iron skillet (which had been getting hot!) which had some butter & a couple crushed cloves of the roasted garlic...in this bath for a few more minutes...
Added baked tator & salad...my plate (mine was just a little thicker so it ended up perfectly rare)...
And Kathy's plate...she likes sautéed mushrooms too...
Will have brownies & ice cream for dessert after we get home from choir practice tonight!

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
"Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"
