Indirect Italian Turkey Sausage

I've always grilled any sausage or brats direct. I remember @darby_crenshaw talk about indirect roasting his links. I tried it tonight and this will be the way I cook sausages from now on. Indirect just let the sausage soak up the smoke and lets the casing get that pop we all look foot.
On the small at 275° indirect with some peach wood

And nuthin but sausage, mustard and horseradish on da plate.

I will refrain from any further comment based on your chix post this evening other than to say the above cook looks great and the diamond plate is getting quite a work-out of late.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

I cooked some chicken sausages indirect last night for the first time and I agree. They were amazing. Only thing I would change is to throw them over direct heat for a few seconds for better color. Very Nice and the way sausage should be cooked, to many cook hot and fast and render out the fat.....another meat that a good thermometer should be used on, pull it before you over cook itVisalia, Ca @lkapigian
