  • step one = open egg. step 2 = light egg with maybe a small load. step three = dangle chicken over coals. step 4 = profit

    Is he saying that he cooks 2 at a time in a Dutch oven then sears them off? Or were the birds in the DO just for the drippings he drizzled over at the end? I couldn't tell if he was letting them smoke up top then finish on the grill or smoke up top then DO and then finish? I'm confused

    Video showed he had a bunch on deck, hanging from the upper rack, getting smoke, rendering a bit, but they were pretty far away to really cook.  Then he put to in the DO for, I think 20 min or so to 'steam' them as he said.  Then pulled them out and grilled direct.  I think this last step was what he did when someone ordered the chicken.  Not sure how he was holding the chicken after the DO, if he just set them aside in the DO but off the coals or if he had a warmer or something.

    watched it again- I think you have it. chickens 2 at a time in DO for 45 min then grilled to order. he must hold them somehow or have many more DO than shown. maybe they only do 10 chickens a night. seems like a lot of work for 10 chickens though

    I suspect we saw the charming TV version, probably more of a production environment on a real Saturday, especially now.
