So let me ask - could you tell a difference in the rubs, especially after saucing? I'm almost to the point where I don't care what I put on, salt and heat are the only two things that seem to survive a long rib cook that I can taste and saucing even mutes those to a bit.

Definitely. Gospel was obviously the saltiest then yardbird. If you like sweet honey hog is definitely the was to go. I didn't let the quests know about the 3 rubs and they all could tell the difference between the 3. I didn't have much time so no smoke on these. Grill 15 for color, wrap for 2 hours at 325 then bake in the sauce for 15. Came out perfect!
