Simple Meal Before Storms Start

Two chicken breasts were in the bucket with Pork-U Turkey Brine for 5 hours when I noticed the sky turning dark.
So I got them ready while the large was coming up to temperature.

Wrapped firebricks and a slightly raised grill, direct cook with temperature at 350 degrees.

On at 6:00 pm and the rain was about to start. 

Pulled and rested while the storm got going.

Added Jasmine rice and beets and was eating at 7:11 pm. Breasts were tender and very moist. Love simple quick meals.
