Weekend Oysters

Got a CI oyster pan from a friend and decided to bust it out this weekend. Went with smoked oysters Rockefeller. Garlic, butter, breadcrumbs, parsley, spinach and topped with some shaved Parmesan. Egged for 4 minutes at 450 to melt everything together and give them a little smoke flavor. Simple, easy and delicious!

Looks good Cody. I've only done oysters on the egg a couple of times, but love them. If you like spicy stuff try doing hot shucks. Slather the oyster with cayenne butter, a slice of jalapeno, topped with pepper jack cheese.Large and Small BGECentral, IL

For our purposes, we are really talking about grilling. Direct fire, probably about 400 or so - a hamburger fire. When grilling oysters (no matter the toppings, you want them to be sizzling in their own juices (oyster liquor) - about three minutes. You can close the top if you have cheese to melt or toppings to brown. Definitely doesn't hurt to have some smokewood in the fire.
Smoking oysters is a whole different thing, which I've only done a couple of times. Those you want as low as you can, because oysters cook really fast. You don't really want to dessicate them, so you want to get a little smoke on them and pull them just before they dry out.

These look great. Do u think I could put them direct on grill? Maybe they'd just be a pain to lift off again. Maybe I'll use a shallow muffin tin / metal tray

@TheToast Tongs needed for sure w/o the pan. My experience in the past without the pan is it can be difficult to balance them on the grid. They tip easily and you can lose all your toppings. I got the pan as a gift but I'd argue it's worth the $40 to keep them balanced and to transport them easily. Just my opinionTheToast said:These look great. Man I love oysters rockfeller, but I no longer make them. Every time I open an oyster, I eat the oyster, and then I'm just left with shells.
