Doner Kebab a la Verts
CPARKTX

Verts is an Austin chain that serves a killer chicken Doner Kebab, which I have been wanting to replicate. So here goes:
To replicate the chicken shaved off of the rotisserie, I cooked chicken thighs raised direct, then chopped it up and threw it on my plancha to crisp it up.

Verts has has some awesome bread, no idea what is was, but to try and replicate I got both pita and naan, and grilled it. The naan was the winner, though not at all like averts.

Toppings were: grilled corn, tomatoes, green olives, chick peas, cabbage slaw in a vinegrette dressing, lettuce.

Turned out awesome (though not spot on to Verts).

The few doner kebab places I've been to typically serve it with something slightly thinner than Stonefire naans.#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX. -
