These are always a family favorite, I should do these more often. I used beef instead of the traditional lamb

Very nice. Tell me about the beef please.

@caliking just let me know when.
@mickey I used 85/15 grass feed beef. Seasoned with cumin, sumac, red pepper flakes and critically salt. I knead and add about 2 Tbs ice water, want it to be super sticky to stay on skewers. Then I refrigerate for an hour before forming and putting on skewers.

I've been to Adana and got to enjoy the real deal kabobs - I love the food there.

Yours look great, @CPARKTX. Well done!

I need to get some flat skewers, this just looks too good.  Where do you get your pitas around here?

Thanks.  I wasn't happy with the ones we got from TJs.  I've bought from HEB before as well.  I may see what Phoenicia deli has next time.

Was stationed near Adana in late 60's.  Adana kebab and stuffed peppers were my favorite when we could get them. We were remote and isolated so not often enough

If you're talking about Phoenicia in Houston, they have excellent premixed kebab meat of all kinds. The big store on Weestheimer is a real treat and worth the trip.

Austin, but wonder if they're related.  I'll look it up.
