@mickey I used 85/15 grass feed beef. Seasoned with cumin, sumac, red pepper flakes and critically salt. I knead and add about 2 Tbs ice water, want it to be super sticky to stay on skewers. Then I refrigerate for an hour before forming and putting on skewers.LBGE & SBGE. Central Texas. -

Was stationed near Adana in late 60's. Adana kebab and stuffed peppers were my favorite when we could get them. We were remote and isolated so not often enoughNear Music City in the Boro
