Mac 'n Cheese

With fall just around the corner here in upstate NY, I got to thinking about "comfort" foods, my fave being mac and cheese. Any ideas, experiences, recipes out there would be greatly appreciated! I'm thinking a little Egg smoke could be amazin on the right M & C recipe.

    Since Egret is on his way to Sicily, I will post this on his behalf.[p]Pasta, Macaroni & Cheese W/Wine, Egret
    [p]1 1/2 Cups Uncooked Elbow Macaroni
    1/4 Cup Chopped Oonion
    3 Tbs Butter, Melted
    3 Tbs All-Purpose Flour
    1 1/2 Cups Milk
    1/2 Cup Dry White Wine
    1/2 Tsp Salt
    Pepper to Taste
    3 Cups/12 Ozs. Shredded Sharp Cheddar Cheese, Divided
    Paprika
    Dry Bread Crumbs



    1 Establish BGE at 350°F. Indirect
    2 On range top :
    3 Cook macaroni, drain and set aside. Sauté onion in butter in heavy saucepan; add flour, stirring until mixture is smooth. Cook one minute, stirring constantly. Gradually add milk and wine; cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Remove from heat; add salt, pepper, and 8 ounces of cheese. Stir until cheese melts. Add macaroni and mix well.
    4 Pour into a lightly greased 2-quart casserole. Sprinkle with 4 oz. cheese, paprika and bread crumbs. Cover and bake in BGE for 15 minutes. Uncover and continue baking 15 minutes. Remove and let rest for about 10 minutes before serving.

    Smoked mac n cheese sounds great. I have been seeing advertisements for fried mac n cheese and have been dying to get out and try some.

    Macaroni and Cheese Supreme [p]
    1 12-ounce pkg of macaroni, cooked according to directions, rinsed and drained and set aside [p]
    4 Tablespoons butter, melted [p]4 Tablespoons flour, mixed with the butter to form a roux [p]2 teaspoons dry mustard [p]1 teaspoon salt [p]A light pinch of cayenne pepper [p]1 tall can evaporated milk PLUS 1 can water [p]
    In a saucepan on the range, or in the microwave in a microwave safe dish, mix together the above ingredients, cook and stir until thickened, taking care to beat out any lumps with a French Whisk. Remove from the heat source, and add: [p]
    1 pound of cheddar cheese grated, 1/2 cup reserved [p]Odds and ends of cheese you may have on hand which has dried up or otherwise unusable [p]1 pint of cottage cheese (yes, cottage cheese) [p]1 cup of sour cream [p]Macaroni from above [p]
    Turn oven to 350 degrees and butter a large casserole dish or pan. Add the mixture from above to the prepared pan and spread it out evenly. Sprinkle the top with the reserved cheese and some paprika if you like. Place in a preheated oven and bake until heated through, is bubbling and the cheese on top is melted, 40 minutes or so. Remove from oven and serve hot. [p][p]

    this is not original...make your mac, not to wet, take a handfull and roll into a ball...roll it some egg wash and bread crumbs and fry 'em until nice and brown.....fabulous...
