Blueberry BBQ Chicken
My store only had one small chicken, and it was out of date, so I had to use an already cut into pieces chicken instead of the spatchcock the recipe called for. It was still really good, though.
Blue Q Sauce Ingredients
- 3 cups (710 ml) blueberries
- 2 cups (480 ml) apple cider vinegar
- 2 cups (480 ml) granulated sugar
- 1 tsp (5 ml) salt
- One 3-inch cinnamon stick
- 1 bay leaf
- ¼ tsp (2 ml) chili flakes
To make the Blue Q Sauce (ingredients below), begin by combining the blueberries and a little of the vinegar in a food processor. Pulse the berries just to break them up. You’re not trying to achieve smooth berries at this point; you just want to get some blue juice flowing. In a Dutch oven or 4 quart (3.75 L) saucepan, combine all of the sauce ingredients. Bring to a simmer over medium heat and cook for one hour, covered. Give it a stir from time to time to avoid scorching the bottom.
Carefully transfer the sauce to a blender. Pull the little knob off the top of the lid and cover it with a dish towel to prevent a mess! Blend the sauce to get it as smooth as you can, then strain it through a fine mesh strainer and transfer it back to your pan. Cook to reduce it by one-third. The Blue Q should coat the back of a spoon and be the viscosity of maple syrup. Refrigerate overnight to let things mellow out. This sauce will keep for months covered in the refrigerator.

Thanks for sharing. I'm going to have to try this. I've been looking for a good variation on chicken. I'm tired of regular bbq sauce, wing sauce and teriyaki. This looks delicious. I think a little chipotle added to the blueberry might pair nicey.Athens, GA

I saw that recipe a while back, but tossed the mag. Vivian is such a stuck up, spoiled, beeyotch...cannot stand her after watching a couple episodes of "A Chef's Life". It goes far beyond the cheffy personality, I feel sorry for her husband...he definitely uses SWMBO lol. I wouldn't be surprised if she had a penis.

The blueberry sauce I made with those pork chops was inspired by her sauce and blueberry chutney.
She's awesome. I have ate at her restaurant AND met her as well. She's very nice and her staff love her and her family. Most of her staff have been there since they've opened. That says a lot.

The two or three episodes I have watched, she is a beeyotch to her husband, a beeyotch to her staff, and cannot handle stress.
Watch the episodes, not a trailer, it's crystal clear.
Her red headed sous chef was awesome though, I felt sorry for her too. And I didn't see her in all of the episodes in the kitchen.
