Jerk Chops
Look at the colour of these beauties! A little Bajan paste with some Dizzy Pig Jamaican Firewalk. Seared on the egg in the lower rack at about 450. New Brunswick, Canada

Looks great!. I will be marinating two chops in Walkerswood tonight for tomorrows cook. Last time I reverse seared them, smoked using Pimentowood chips indirect and then seared.

How hot is the DP Jamaican Firewalk? I have a sample bag that I haven't even opened yet. I'm the only one in my family that even remotely likes spicy food.

@Lowcountrygamecock it's got a pretty good slow burn to it. I have to go easy with it if I'm putting it on something the kids are eating, and they handle a fair amount of spice. It's got no where the kind of heat that Walkerswood has, but you can add as much or as little as you like.
