First Beef Ribs
High temp in the mid 80s in June calls for my first slow cook on the egg. Picked up a rack of beef short ribs and rubbed them down with a hot sauce slather and SPG. Got the egg hovering at 285, with some Rockwood and pecan chunks. I'll post pics throughout the process.

Off the egg at 205 IT headed inside to rest, while another batch of pig shots makes their way into the egg.

That looks amazing. When I see short ribs in the store they are generally only about 2 inches long and cut apart. I have used them in stews but I have never thought about them as brisket on a stick. This will be my next slow cook
I wonder if I can get them in South Carolina... Thanks for posting this @Cdm624!! Johns Is, SC

I was in the grocery store this morning and saw some cut into single bones and then into 3" chunks, so I asked the butcher if they had any racks he hadn't cut up yet. He said normally only Argentinian people ask for them this way and that I didn't look Argentinian (I'm white as a ghost from working night shift for years). I guess no one around here knows they have them because becoming fairly popular around here.booksw said:

2nd cook on this egg. Had an XL for about 2 years from 2011-2013. Been smoking on my dad's trailer mounted stick burner for years. These are my very first Beef ribs though.td66snrf said:Those are beautiful! Do you really expect us to believe this is only your 2nd cook? C'mon
My previous egg i had a BBQ guru but this one I decided I wanted to be more of a challenge and manage the fire on my own. So I guess you can factor that in too. -
Taste test time. I think I could have went a few more degrees before I pulled them by they are quite tasty.

Those ribs look great.
I've only cooked them once, I wasn't impressed with my results.
I don't know what I was expecting them to turn out like, being from a pork bbq region, beef bbq is a new experience for me.
Again, Your ribs look great...... -
