First Beef Ribs
High temp in the mid 80s in June calls for my first slow cook on the egg. Picked up a rack of beef short ribs and rubbed them down with a hot sauce slather and SPG. Got the egg hovering at 285, with some Rockwood and pecan chunks. I'll post pics throughout the process.

That looks amazing. When I see short ribs in the store they are generally only about 2 inches long and cut apart. I have used them in stews but I have never thought about them as brisket on a stick. This will be my next slow cook I wonder if I can get them in South Carolina... Thanks for posting this @Cdm624!!Johns Is, SC

My previous egg i had a BBQ guru but this one I decided I wanted to be more of a challenge and manage the fire on my own. So I guess you can factor that in too. -
Taste test time. I think I could have went a few more degrees before I pulled them by they are quite tasty.

Those ribs look great.
I've only cooked them once, I wasn't impressed with my results.
I don't know what I was expecting them to turn out like, being from a pork bbq region, beef bbq is a new experience for me.
