Never seen a brisket point for sale.

I always see flats and a whole brisket for sale but never the point.

Why is that?

Because you are looking in the wrong state.
Some cuts are just not popular everywhere. The sales drive the market of the product.
Think about buying the whole brisket for the point. Grind the flat for burgers.

Because they are not as popular.  Market demand drives how the cow is cut up.  There is one market near me that does split briskets into flats and points. All the others have either flats or whole.

In cooking, often we implement steps for which we have no explanations other than ‘that’s what everybody else does’ or ‘that’s what I have been told.’  Dare to think for yourself.

I guess here in Illinois points aren't that popular.   Went to three Costcos and all I see are flats now.

As you note, @Photo Egg depends on the local market.
Interesting because my local meat cutter does just the opposite. The flats are typically displayed all trimmed and ridiculously priced while the points are ground.

Even in Texas I see trimmed flats everywhere. And like you said, priced crazy high most of the time. Finding just the point is not as easy but still easier than finding a good Tri-Tip.lol
