Shrimp and grits. No, wait, ribs and grits.

Decided to make a quick serving of shrimp and grits and it turns out the little bag of frozen shrimp was freezer burnt, so I made ribs and grits instead.
Just took a couple of leftover ribs from the other day, cut the meat from the bones and cubed it, sauteed it in some olive oil, added a couple tablespoons of salsa and reduced the liquid in the pan with the rib meat, then topped a bowl of cheese grits with the rib meat concoction.
Very good and very different. I will do this on purpose next time instead of just faking it as I went. This would be good with burnt ends too.

    Just another variation from Eggs and grits. Good stuff brother. Hard to beat any type of protein with grits. Its the new fries. :):)

    If you ever need a new grits recipe, innocently ask a southern stranger what grits taste like. Never got an answer but always got a new cooking method!

    Sounds GREAT!

    I love grits, only problem with them is I especially love them LOADED with butter...  And then of course some heavy cream never hurt any grits...  And then some good cheese sure is fine with some grits...

    Yeah, maybe I'll have mine with all of the above, and maybe some extra cholesterol on the side!  :)
