    I got two 17 pound Costco primes going on tonight.  With 3 butts on top.  Tomorrow we feast like kings.

  • Defrosted a 16LB SRF on Tuesday. Got back from a work trip last night and it was ready to go. Rubbed it all down today but not sure when I'm going to throw it on. Was going to do a dishwasher cook but the heat index is 105 in the shade today and tomorrow. Rain Sunday and Monday. I think I'll throw it in one of my eggs tonight or tomorrow night and let it roll overnight. No way I'm tending a live fire for 14 hours when it's 105 heat index. It's like a freaking sauna out there right now. I cleaned my pool at 9 am and sweated for an hour after i was done! This weekend is going to spent in the pool with the eggs doing the heavy lifting.

    Cooking a pig Saturday night for Sunday picnic. Nothing planned for Monday at the moment......
    Maybe I'll have to pick up a brisket this weekend.
    Wife was complaining we were out of leftover brisket in the freezer.

    Got a SRF black thawed, trim and season tonight.  Since I'm on the clock for slice and eat around 1 PM Sunday the BGE will be doing its thing all Sat night.
    I will have to pace the adult beverages on Sat or the start could get hosed.  Gonna be a great night if only for the cook.  
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    Nice to see so many jumping in so early for the Memorial Day / National Brisket Day weekend!  Great job!    
    I have to clean out the egg tomorrow and will put it on Sat  night or Sunday morning

    I just pulled my SRF flat and the point is on braising I  butter for an hour then pulling it.  FTC'd till dinner tonight at 6ish.

    Not to worry. I hang around with some sorry folks - they will help. Actually had some folks over today that gladly test drove 3 of them. They loved them.
