Brisket on a stick for mothers day


Picked up a pair of choice plate ribs from publix. Chose one and froze one. Trimmed a little and rubbed with instant gourmet coffee rub (love this $hit).  Filled the egg with rockwood and a few oak chunks and zeroed in on 225.  In 8 hours internal temp was 197. Took off , let it rest and BAM!!!!!   Nailed it. Best one yet but I must say I have never been disappointed.

    Nailed it right there.  Thread title says it all.  Congrats.
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    I am more and more impressed with their meat dept every time. it's my go to now. No great butcher shops around here. Just use Costco and publix . This meat wasn't on display. Had to ask for it and came in a vacuum sealed pack. With two in it. See pic..

    Looks great!  You definitely nailed it. I got the exact same pack at Sam's. Same deal- you have to ask for them.
